Clemengold tagine

Ingredients

  • salt and black pepper
  • 60 g green olives
  • 1 tin of chickpeas
  • 750 ml ClemenGold juice
  • 10 ml paprika
  • 10 ml ground coriander
  • 10 ml ground cumin
  • 2.5 ml cumin seeds
  • 1 chopped red chilli
  • 1 garlic cloves, crushed
  • 1 red onions, sliced
  • 1 pack (4 , 4) Free range chicken drumsticks and thighs

Cooking Instructions

  1. Brown the chicken pieces in a large tagine or saucepan
  2. Once golden, remove and set aside
  3. in the same tagine/pan, fry the onions until translucent, then add the garlic, chilli and cumin seeds and fry for a further 3 minutes
  4. Add the ground cumin, ground coriander and paprika, then return the chicken to the tagine/pan
  5. Add the ClemenGold juice and, if necessary, extra stock/water to cover the chicken completely
  6. Cover and allow to simmer for 45 minutes to an hour
  7. After simmering for about an hour, remove the lid and allow the sauce to reduce
  8. Add the chickpeas and olives and season well. Allow to heat through
  9. Sprinkly with toasted almond flakes and serve.
